These Easy Crockpot Honey Garlic Chicken Thighs are a forgiving, flavorful, and effortless dinner. The chicken comes out tender and juicy, coated in a sticky, sweet-savory sauce that makes everything around it taste better.

  • 2 pounds boneless, skinless chicken thighs
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a small mixing bowl, whisk together the honey, low-sodium soy sauce, rice vinegar, sesame oil, minced garlic, ground ginger, and red pepper flakes (if using). Set aside.
  2. Place the chicken thighs in the bottom of a 5- to 6-quart crockpot, spreading them out in a single layer as much as possible.
  3. Pour the sauce mixture over the chicken, making sure each piece is coated.
  4. Cook on low for 6 to 7 hours or on high for 3 to 4 hours. About halfway through, gently stir the chicken if possible.
  5. Check for doneness: the chicken should shred easily with a fork and reach an internal temperature of 165°F.
  6. Shred the chicken directly in the crockpot using two forks or tongs.
  7. To thicken the sauce (optional), whisk together 2 tablespoons cornstarch with 2 tablespoons cold water until smooth. Remove about 1 cup of cooking liquid from the crockpot, whisk it into the cornstarch mixture, then pour back into the crockpot. Cook on high for 15 to 20 minutes until thickened and glossy.
  8. Garnish with chopped green onions and sesame seeds. Serve over steamed rice, noodles, or greens.

Notes

For best results, use low-sodium soy sauce to control saltiness. If using chicken breasts, reduce cooking time to 4-5 hours on low or 2-3 hours on high. The sauce can be doubled if you like extra. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
