  • 8 slices white bread (or sourdough, brioche, or whole wheat)
  • 8 ounces deli ham, thinly sliced (honey ham or black forest ham recommended)
  • 4 slices provolone cheese (or Swiss, mozzarella, or cheddar)
  • 4 tablespoons cream cheese, softened
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon mayonnaise (optional)

Instructions

  1. In a small bowl, combine the softened cream cheese and Dijon mustard. Mix until smooth and well combined.
  2. Lay out 4 slices of bread. Spread about 1 tablespoon of the cream cheese mixture evenly on each slice.
  3. On each cream cheese-covered slice, place 2 ounces of ham (about 4-5 thin slices), folding it to fit. Top with 1 slice of provolone cheese.
  4. Place the remaining 4 slices of bread on top to form sandwiches. Press down gently.
  5. In a small bowl, mix the softened butter and mayonnaise together until smooth. Spread this mixture on the outside of each sandwich—both sides.
  6. Place a large non-stick skillet or griddle over medium heat. Let it heat up for 2-3 minutes.
  7. Place 2 sandwiches in the hot skillet. Cook for 3-4 minutes per side, until the bread is deep golden brown and the cheese is fully melted.
  8. Remove the sandwiches from the skillet and let them rest for 1-2 minutes on a cutting board. Slice each sandwich in half diagonally. Serve warm.

Notes

For best results, use room temperature cream cheese and butter. Don’t skip the cream cheese—it acts as a binder and keeps the filling creamy. Let the sandwiches rest for 1-2 minutes before cutting to prevent the cheese from oozing out. For a dairy-free option, use dairy-free cream cheese and butter, and swap the provolone for a dairy-free melting cheese.
