Easy Homemade Cozy Apple Cider Donuts with Cinnamon Sugar

These soft, tender baked apple cider donuts are coated in a perfect cinnamon-sugar crust and come together in under 30 minutes. No yeast, no deep frying—just mix, bake, and roll for a taste of autumn in every bite.

  • 1 ¾ cups all-purpose flour (spooned and leveled)
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • ⅔ cup unfiltered apple cider
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)
  • 3 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Spray donut pan generously with non-stick cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and melted butter until smooth. Add eggs one at a time, whisking well after each addition.
  4. Pour in apple cider and vanilla extract. Whisk until uniform.
  5. Add dry ingredients to wet ingredients in two additions, stirring gently until just combined. Do not overmix.
  6. Transfer batter to a piping bag or Ziploc bag with corner snipped. Pipe batter into prepared donut pan, filling each well about ⅔ full.
  7. Bake for 10 to 12 minutes, until golden brown and a toothpick inserted comes out clean.
  8. Let donuts cool in pan for 2 minutes, then turn out onto a wire rack. Cool for another 2 to 3 minutes.
  9. Mix sugar and cinnamon for coating in a shallow bowl. Melt 3 tablespoons butter in a separate bowl.
  10. Working one at a time, brush donut with melted butter, then dip into cinnamon sugar to coat all sides. Shake off excess and place on rack. Repeat with all donuts.

Notes

Do not skip room temperature eggs—cold eggs will seize the melted butter. The batter is thinner than expected; do not add extra flour. Pipe batter for clean holes. Grease pan generously to prevent sticking. Coat donuts one at a time while warm for best sugar adhesion. Store in airtight container at room temperature for up to 2 days. Freeze uncoated donuts for up to 3 months.
