  • ¼ cup pure maple syrup (Grade A or Grade B)
  • 2 tablespoons pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • Pinch of ground cloves
  • 1 teaspoon vanilla extract (pure vanilla)
  • Pinch of salt

Instructions

  1. Combine the wet ingredients: In a small saucepan, add 1 cup heavy cream, 1 cup whole milk, ¼ cup maple syrup, and 2 tablespoons pumpkin puree. Whisk together until the pumpkin puree is mostly incorporated.
  2. Add the spices: Sprinkle in 1 teaspoon pumpkin pie spice, ½ teaspoon cinnamon, ¼ teaspoon ginger, ⅛ teaspoon nutmeg, a pinch of cloves, and a pinch of salt. Whisk until smooth and pale orange.
  3. Heat gently: Place the saucepan over medium-low heat. Warm the mixture slowly, stirring frequently, until steam rises and it’s hot to the touch (about 160°F). Do not boil.
  4. Add the vanilla: Remove from heat and stir in 1 teaspoon vanilla extract.
  5. Strain (optional): For a silky texture, pour the creamer through a fine-mesh strainer into a mason jar or bottle.
  6. Cool and store: Let the creamer cool to room temperature before sealing. Refrigerate. Shake before each use.

Temperature control is key—do not boil the creamer or it may separate. Whisk pumpkin puree with a splash of warm milk first to prevent clumps. Flavors develop after a few hours in the fridge, so making it the night before is ideal. Shake well before each use as spices settle. For a dairy-free version, use full-fat coconut milk and unsweetened oat milk. To freeze, pour into ice cube trays and store cubes in a freezer bag for up to 3 months.
