  • 1 medium zucchini, grated (about 1 cup), squeezed dry
  • 1 medium carrot, grated (about ½ cup)
  • ½ cup (50g) breadcrumbs (plain or Italian-seasoned)
  • 1 large egg
  • ¼ cup (25g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt (or ¼ teaspoon table salt)
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 jar (24 oz) marinara sauce (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prep the vegetables: Grate the zucchini and carrot. Place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Mix the meatball base: In a large mixing bowl, combine ground turkey, squeezed zucchini, grated carrot, breadcrumbs, egg, Parmesan cheese, minced garlic, oregano, salt, and pepper. Gently mix with your hands until just combined.
  3. Shape the meatballs: Using a cookie scoop or your hands, form the mixture into 1½-inch balls (about golf ball size). You should get 18-20 meatballs. Place on a plate or baking sheet.
  4. Heat the pan: Place a large skillet over medium heat and add olive oil. Heat until hot but not smoking.
  5. Brown the meatballs: Carefully place meatballs in the pan without overcrowding. Cook without moving for 3-4 minutes until golden brown on the bottom. Gently turn and cook another 3-4 minutes, turning occasionally, until browned on all sides.
  6. Add the sauce (optional): Pour marinara sauce over the browned meatballs. Reduce heat to low, cover, and simmer for 10-12 minutes until meatballs are cooked through.
  7. Check for doneness: Internal temperature should reach 165°F (74°C). If no thermometer, cut one open to ensure no pink remains and juices run clear.
  8. Serve and enjoy: Garnish with fresh basil or parsley if desired.

Don’t skip squeezing the zucchini—it prevents soggy meatballs. Use a light hand when mixing to avoid dense meatballs. Refrigerate shaped meatballs for 15 minutes before cooking to help them hold their shape. For best results, don’t crowd the pan; cook in batches if needed.
