Easy Marry Me Chicken Soup with Sun-Dried Tomatoes

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts (about 2 medium breasts)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until soft and translucent.
  2. Add the minced garlic and cook for 1 minute, stirring constantly, until fragrant.
  3. Season the chicken breasts with salt, pepper, oregano, and thyme. Place them in the pot and cook for 4-5 minutes per side, until golden brown. The chicken won’t be cooked through yet.
  4. Remove the chicken from the pot and set it aside on a plate.
  5. Add the sun-dried tomatoes to the pot and stir for 1 minute.
  6. Pour in the chicken broth and bring to a boil. Scrape up any browned bits from the bottom of the pot. Let it boil for 2 minutes.
  7. Return the chicken to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes, until the chicken is cooked through (internal temperature of 165°F).
  8. Remove the chicken and shred it using two forks. Return the shredded chicken to the pot.
  9. Reduce heat to low and stir in the heavy cream. Mix gently until the soup turns a pale, creamy color. Do not let it boil.
  10. Add the Parmesan cheese gradually, stirring constantly, until fully melted and the soup thickens slightly. Taste and adjust salt and pepper.
  11. Serve immediately in bowls, garnished with fresh basil.

Notes

For best flavor, don’t skip searing the chicken. Keep heat low when adding cream to prevent curdling. Grate Parmesan from a block for smooth melting. If soup thickens too much, add a splash of broth or water. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
