  • 2 tablespoons maple syrup or honey

  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract

Instructions

  1. Make the blueberry compote: In a small saucepan over medium heat, combine 1 cup (150g) blueberries, 2 tablespoons maple syrup, 1 teaspoon lemon juice, and a pinch of salt. Cook, stirring occasionally, for about 8-10 minutes until the blueberries burst and the mixture thickens slightly. Remove from heat and stir in ½ teaspoon vanilla extract. Let it cool slightly. (If you want a smoother compote, gently mash some berries with a spoon.)
  2. Mix the oats base: In a mixing bowl, combine 1 cup (90g) rolled oats, 1 cup (240ml) milk of choice, ½ cup (120g) Greek yogurt, and 1 tablespoon chia seeds (optional). Stir everything well so the oats are evenly coated and chia seeds are distributed. The mixture should look creamy and a bit loose—that’s perfect.
  3. Sweeten the oat mixture: Add 1 tablespoon maple syrup or honey (adjust based on your sweetness preference) into the oat mixture and stir again. This ensures every bite is balanced and not bland.
  4. Layer in mason jars: Spoon about half of the oat mixture into each jar (if making two servings).
