  • 2 tablespoons extra virgin olive oil
  • Juice of half a lemon (about 1 tablespoon)
  • Salt and freshly ground black pepper, to taste
  • Optional: 2 tablespoons toasted pumpkin seeds or chopped nuts

Instructions

  1. Wash all fresh produce.
  2. Slice the cucumber into thin rounds about 1/8-inch thick or half-moons.
  3. Peel and cut the carrots into matchstick-sized pieces or thin rounds about 2 inches long.
  4. Halve the cherry tomatoes carefully.
  5. Rinse, pat dry, and finely chop the fresh herbs.
  6. In a mixing bowl, combine olive oil, lemon juice, salt, and pepper; whisk gently.
  7. Add cucumber, carrots, and tomatoes to the bowl and toss gently to coat with dressing.
  8. Sprinkle crumbled feta cheese and optional toasted pumpkin seeds or nuts on top; toss once more gently.
  9. Taste and adjust seasoning with extra lemon juice or salt if needed.
  10. Serve immediately or refrigerate up to 2 hours; toss again before serving if chilled.
