This easy pumpkin dump cake with crunchy pecan streusel is a forgiving, fast dessert that tastes like you spent hours layering flavors. It features a soft, spiced pumpkin layer topped with a shattery, buttery pecan crust.

  • 1 (12 oz) can evaporated milk
  • 2 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 (15.25 oz) box yellow cake mix (without pudding)
  • 1 cup chopped pecans, toasted
  • 1/2 cup packed light brown sugar
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together pumpkin puree, evaporated milk, eggs, granulated sugar, pumpkin pie spice, vanilla extract, and salt until smooth.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly.
  4. Sprinkle the dry cake mix evenly over the pumpkin layer. Do not stir.
  5. In a medium bowl, combine chopped pecans, brown sugar, flour, and cinnamon. Pour melted butter over the top and stir with a fork until clumpy.
  6. Sprinkle the streusel evenly over the cake mix layer. Do not press down.
  7. Bake for 45-50 minutes, until the top is deep golden brown and edges are bubbly. A toothpick inserted in the center should come out mostly clean.
  8. Let cool for at least 15 minutes before serving. Finish with a pinch of flaky sea salt.

Notes

Don’t overmix the streusel; use a fork and stop as soon as butter is distributed. Toast pecans first for extra crunch. Use room temperature eggs. Don’t skip the cooling time—let it rest at least 15 minutes. If the top browns too quickly, tent with foil. This cake tastes even better on day two.
