Easy Roasted Cherry Tomato Bruschetta

A quick and easy summer snack featuring roasted cherry tomatoes and garlic on toasted bread, enhanced with fresh basil and optional balsamic vinegar for a rich, sweet, and savory flavor.

Ingredients

  • 2 cups (300g) cherry tomatoes, halved
  • 4 garlic cloves, peeled and left whole
  • 3 tablespoons extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • A handful (10-12 leaves) fresh basil leaves, roughly torn
  • 1 teaspoon balsamic vinegar (optional)
  • 1 loaf (about 250g) baguette or ciabatta, sliced diagonally into 1/2-inch (1.25 cm) thick pieces
  • Optional: red pepper flakes
  • Optional: grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the halved cherry tomatoes and whole garlic cloves with 3 tablespoons of olive oil, ½ teaspoon salt, and a few grinds of black pepper until evenly coated.
  3. Arrange the tomatoes cut side up on a rimmed baking sheet, spacing the garlic cloves evenly.
  4. Roast for 20 minutes until tomatoes are soft and slightly caramelized and garlic is tender and golden.
  5. While tomatoes roast, arrange bread slices on another baking sheet or grill pan and toast in the oven for 5-7 minutes until golden and crisp, flipping halfway.
  6. Once cool enough, squeeze roasted garlic cloves out of skins and mash roughly with a fork.
  7. Transfer roasted tomatoes to a bowl, add mashed garlic, balsamic vinegar (if using), and torn fresh basil. Stir gently and adjust seasoning as needed.
  8. Spoon the tomato mixture generously onto each toasted bread slice. Sprinkle with red pepper flakes or Parmesan if desired.
  9. Serve immediately to enjoy crisp bread and juicy topping.

Notes

Do not overcrowd the pan when roasting to allow caramelization. Use just enough olive oil to coat tomatoes to avoid soggy topping. Keep garlic cloves whole during roasting for mellow flavor. Toast bread until just crisp to hold juicy topping without sogginess. Add fresh basil after roasting to keep vibrant flavor. Store tomato topping separately if prepping ahead and toast bread fresh before serving.
