This easy salted caramel apple crisp with oat crumble is the perfect weeknight dessert—warm, comforting, and ready in under an hour. Tender apples are topped with a buttery oat crumble and finished with a salted caramel drizzle for a treat that feels special but comes together with minimal effort.

Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about ¼-inch thick)
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, cold and cut into small cubes
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup store-bought caramel sauce
  • ½ teaspoon flaky sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Lightly butter a 9×13-inch baking dish.
  2. Peel, core, and slice apples into even ¼-inch thick pieces. Toss with lemon juice immediately to prevent browning.
  3. In a large bowl, combine sliced apples with granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg, and vanilla extract. Mix well and let sit while making the crumble.
  4. In a medium bowl, whisk together oats, ¾ cup flour, brown sugar, salt, and ½ teaspoon cinnamon. Add cold butter cubes and cut in with a pastry cutter or fingertips until mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Pour apple mixture into prepared baking dish and spread evenly. Sprinkle oat crumble over the top, covering apples completely. Do not press down.
  6. Place dish on a baking sheet and bake for 35-40 minutes, until filling is bubbly around edges and topping is golden brown. Tent with foil if browning too quickly after 25 minutes.
  7. Remove from oven and let cool for 5 minutes. Warm caramel sauce slightly (about 15 seconds in microwave) and drizzle evenly over top. Sprinkle with flaky sea salt while caramel is warm.
  8. Let crisp rest for at least 10-15 minutes before serving to allow juices to thicken.

Notes

Don’t skip the resting time—it allows juices to thicken. Use cold butter for the crumble. For best texture, use old-fashioned rolled oats, not quick oats. The caramel should be added fresh after baking. Can be assembled up to 24 hours ahead (without caramel) and refrigerated; add 5-10 minutes to baking time.
