These easy slow cooker cinnamon rolls are the perfect Christmas morning treat. They’re warm, gooey, and absurdly simple, allowing you to enjoy the holiday without stress.

  • 1 (1-pound) loaf frozen bread dough, thawed overnight in the refrigerator
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup packed brown sugar (light or dark)
  • 2 tablespoons ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons milk

Instructions

  1. Line your slow cooker with parchment paper, leaving some overhang on the sides. Lightly spray the parchment with non-stick cooking spray.
  2. The night before, move your frozen bread dough from the freezer to the refrigerator to thaw.
  3. In a small bowl, combine the brown sugar, granulated sugar, cinnamon, and salt. Stir until evenly mixed.
  4. Lightly flour your work surface. Roll the thawed dough into a rectangle about 12×18 inches.
  5. Spread the softened butter evenly over the dough, leaving a 1-inch border along one of the long edges.
  6. Sprinkle the cinnamon sugar mixture over the buttered dough, pressing it gently into the butter.
  7. Starting from the long edge opposite the butter-free border, roll the dough tightly into a log.
  8. Using a sharp serrated knife or bench scraper, cut the log into 12 even pieces, each about 1.5 inches thick.
  9. Place the rolls in the prepared slow cooker, cut side up. They should be snug but not crammed.
  10. Cover the slow cooker with the lid and let the rolls rise at room temperature for 30 to 45 minutes.
  11. Set the slow cooker to HIGH and cook for 1.5 to 2 hours. Check at the 1.5-hour mark.
  12. While the rolls cook, make the glaze: In a medium bowl, beat the softened cream cheese and butter together until smooth. Add the powdered sugar and vanilla, then beat again. Add milk one tablespoon at a time until the glaze is thick but pourable.
  13. When the rolls are done, carefully lift them out using the parchment paper handles. Let them cool for 5 minutes, then drizzle the glaze over the top. Serve warm.

Don’t overcrowd the slow cooker; stick with 12 rolls for a 6-quart model. Check your slow cooker’s temperature as they vary. Let the dough rise properly for best texture. Use parchment paper for easy cleanup. Make the glaze ahead to save time on Christmas morning.
