Ingredients

  • Smoked sausage, 12 ounces (340g) — fully cooked variety like kielbasa or andouille
  • Cheddar cheese, 8 ounces (225g) — sharp cheddar, cut into 1-inch cubes
  • Mini dill pickles, 1 cup (about 24 pickles) — baby dills or gherkins
  • Red bell pepper, 1 medium — for football laces
  • Fresh parsley, optional for garnish
  • Honey mustard, 1/2 cup (120ml) — store-bought or homemade
  • Smoked paprika, 1/2 teaspoon — optional, for dipping sauce

Instructions

  1. Prep your ingredients: Slice smoked sausage into rounds about 1/2-inch thick (1.3 cm). Cut cheddar cheese into 1-inch cubes. Drain mini pickles and pat dry.
  2. Cut the bell pepper laces: Slice red bell pepper in half, remove seeds and membranes. Use a small football-shaped cookie cutter or a paring knife to cut 6-8 small strips about 1 inch long and 1/4 inch wide.
  3. Assemble the skewers: Thread a wooden skewer with one slice of smoked sausage, then a cube of cheddar cheese, then a mini pickle, and end with another slice of smoked sausage. Repeat to make about 24 skewers.
  4. Arrange in a football shape: On a large serving platter, arrange the skewers in the shape of a football, starting with the outer edge and filling in the center.
  5. Add the laces: Place the bell pepper strips across the center of the platter to mimic football laces, spacing them about an inch apart.
  6. Make the dipping sauce: In a small bowl, stir together honey mustard and smoked paprika (if using). Place the bowl on the platter.
  7. Serve immediately: Garnish with fresh parsley if desired. Serve at room temperature. If made ahead, refrigerate and let sit out for 15 minutes before serving.
