  • 3 tablespoons (45ml) Dijon mustard
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon (2g) smoked paprika
  • ½ teaspoon (1.5g) garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon (15ml) olive oil
  • Wooden or metal skewers

Instructions

  1. Make the Honey Mustard Glaze: In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, smoked paprika, garlic powder, and a pinch of salt and pepper. Taste and adjust sweetness or tanginess. Set aside 2 tablespoons for brushing during cooking and reserve the rest for serving.
  2. Prepare the Sausage: Slice the smoked sausage into 1-inch rounds. If the sausage is particularly thick, cut the rounds in half.
  3. Assemble the Skewers: Thread the sausage pieces onto the skewers, leaving a little space between each piece for even cooking. Fit about 5-6 pieces per skewer.
  4. Preheat the Grill: Heat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it over medium-high heat for 2-3 minutes.
  5. Brush with Oil: Lightly brush the skewers with olive oil to prevent sticking and promote grill marks.
  6. Grill the Skewers: Place the skewers on the grill. Cook for 3-4 minutes per side, until the sausage is nicely charred and heated through, with deep brown grill marks and slight crispiness on the edges.
  7. Glaze and Finish: During the last 2 minutes of cooking, brush the skewers with the reserved honey mustard glaze. Let it caramelize slightly, being careful not to burn it.
  8. Rest and Serve: Remove the skewers from the grill and let them rest for 2 minutes. Serve immediately with the extra honey mustard dip on the side.

Notes

If the glaze starts to burn on the grill, move the skewers to a cooler part of the grill or reduce the heat. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Make extra honey mustard glaze for dipping—double the mustard, honey, and vinegar, and set half aside before brushing.
