Instructions

  1. Brown the chorizo: Heat olive oil in a large skillet over medium-high heat. Add chorizo, breaking it up with a wooden spoon, and cook until crispy, about 5-7 minutes. Transfer cooked chorizo to a plate lined with paper towels, leaving about 1 tablespoon of rendered fat in the pan.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion to the pan and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Deglaze the pan: Pour in about 1/4 cup of the milk and scrape up browned bits from the bottom of the pan. Let simmer for about 30 seconds.
