  • 1/3 cup all-purpose flour (or almond flour for gluten-free)
  • 1/3 cup packed brown sugar
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the sweet potatoes: Peel and cube them into 1-inch chunks. Place in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook for 15-20 minutes, until fork-tender. Drain well.
  3. Mash the sweet potatoes: Transfer drained sweet potatoes to a large mixing bowl. Mash with a potato masher until smooth, leaving a few small chunks if desired. Let cool for about 5 minutes.
  4. Mix the filling: Add melted butter, brown sugar, beaten eggs, milk, vanilla, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Stir until well combined and smooth.
  5. Make the streusel: In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  6. Assemble the casserole: Pour the sweet potato mixture into the prepared baking dish and spread evenly. Sprinkle the pecan streusel over the top, covering completely. Do not press down.
