  • 810 slices deli turkey breast (about 68 oz)
  • 810 slices sharp cheddar cheese

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20 minutes or microwaving for 10-15 seconds until spreadable.
  2. In a small bowl, combine softened cream cheese, dry ranch seasoning, shredded cheddar, chopped bell pepper, and green onion. Stir until evenly distributed.
  3. Lay a large flour tortilla flat on a cutting board. Ensure it is at room temperature.
  4. Spread a generous, even layer of the cream cheese mixture over the entire surface of the tortilla, going all the way to the edges.
  5. Place 2-3 slices of deli turkey flat over the cream cheese, overlapping slightly to cover the surface.
  6. Lay 2-3 slices of cheddar cheese over the turkey, overlapping slightly.
  7. Starting from one edge, roll the tortilla as tightly as possible without tearing, keeping the filling tucked in. Press down gently to seal the seam.
  8. Wrap the rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Place seam-side down on a baking sheet or plate. Repeat with remaining tortillas.
  9. Refrigerate for at least 30 minutes, preferably 1-2 hours.
  10. Unwrap the chilled rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick pinwheels using a gentle sawing motion.
