  • 1 bottle (12 oz) dark stout or porter
  • 3 large yellow onions, thinly sliced

  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon packed brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon caraway seeds (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 46 hoagie rolls or sturdy buns, toasted

Instructions

  1. Prep the onions and brats: Slice 3 large onions into thin half-moons. Pat the bratwurst dry with a paper towel. Prick each brat once or twice with a fork.
  2. Brown the bratwurst: Heat 1 tablespoon butter in a large Dutch oven over medium-high heat. Add bratwurst in a single layer and brown for 2-3 minutes per side until deep golden-brown. Transfer to a plate and set aside.
  3. Caramelize the onions: Reduce heat to medium. Add remaining 1 tablespoon butter and all sliced onions. Sprinkle with a pinch of salt and brown sugar. Cook, stirring occasionally, for 10-12 minutes until soft, translucent, and light golden brown. Scrape up any browned bits from the bottom.
  4. Deglaze with beer: Pour in the light lager first, scraping up fond from the bottom. Then pour in the dark stout. Let it simmer for 2 minutes.
  5. Braise the brats: Return bratwurst to the pot, nestling them into the onions and beer. Add chicken broth and caraway seeds (if using). Bring to a gentle simmer, reduce heat to low, cover, and braise for 20 minutes.
  6. Finish and thicken: Transfer brats to a plate. Increase heat to medium-high and simmer the onion mixture uncovered for 5-7 minutes until reduced and syrupy. Stir in Dijon mustard.
  7. Serve immediately: Place a bratwurst in a toasted bun. Top with a generous amount of caramelized onions and sauce. Garnish with fresh parsley and black pepper.

Notes

Don’t rush the onion caramelization—10-12 minutes builds the flavor foundation. Use a 50/50 mix of light lager and dark stout for balanced flavor. Toast the buns to prevent sogginess. The Dijon mustard stirred in at the end is non-negotiable for brightness.
