These smash burger tacos combine crispy, thinly pressed beef patties with a creamy homemade American cheese sauce, wrapped in soft tortillas for a quick and satisfying meal.

  • 1 lb (450g) ground beef, preferably 80/20 for juiciness
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp vegetable oil or canola oil (for the griddle)
  • 4 oz (115g) American cheese, roughly chopped
  • ½ cup (120ml) whole milk
  • 1 tbsp unsalted butter
  • 1 tsp Dijon mustard
  • Pinch of garlic powder (optional)
  • Salt, to taste
  • 6 small flour or corn tortillas (soft, warmed)
  • 1 cup shredded iceberg lettuce or shredded cabbage
  • ½ cup diced tomatoes or pico de gallo
  • Pickled jalapeños or sliced fresh jalapeños (optional)
  • Thinly sliced red onion (optional)
  • Fresh cilantro for garnish

Instructions

  1. Divide the ground beef into 6 equal portions (about 2.7 oz or 75g each). Roll each loosely into a ball—don’t overwork the meat to keep it tender.
  2. Place your cast iron skillet or griddle over medium-high heat and add 1 tablespoon of vegetable oil. Let it get hot until it’s shimmering but not smoking—about 3 minutes.
  3. Place 2-3 beef balls on the skillet (don’t crowd the pan). Using a sturdy spatula, press each ball down firmly into a thin patty about ¼ inch (6mm) thick. Hold for 20 seconds to create a crispy crust.
  4. Sprinkle salt and pepper on the exposed side. Cook for 2-3 minutes until the edges are brown and crispy. Flip carefully and cook for another 1-2 minutes. Remove and keep warm. Repeat with remaining patties.
  5. In a small saucepan over low heat, combine chopped American cheese, milk, butter, Dijon mustard, and garlic powder. Stir gently until cheese melts and sauce is smooth—about 5 minutes. Add salt to taste. If the sauce is too thick, whisk in a splash more milk.
  6. Heat tortillas in a dry skillet or microwave until soft and pliable. Keep wrapped in a clean kitchen towel to stay warm.
  7. Place a smash burger patty on each tortilla. Drizzle generously with the creamy American cheese sauce. Add shredded lettuce, diced tomatoes or pico de gallo, jalapeños if using, and a few slices of red onion. Garnish with fresh cilantro.
  8. Serve immediately while the patties are hot and crispy, and the cheese sauce is silky.

Notes

Do not press the patties again after flipping to retain juices. If cheese sauce thickens while assembling, gently reheat with a splash of milk. Use a hot pan for a crispy crust. For gluten-free, use corn tortillas labeled gluten-free or lettuce wraps. For dairy-free, substitute vegan cheese, plant-based milk, and butter.
