A quick and easy healthy breakfast or snack featuring layers of fresh strawberries, creamy Greek yogurt, and crunchy honey almond granola.

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup Greek yogurt (plain, full-fat or 2%)
  • 2 tablespoons honey almond granola
  • 1 teaspoon honey, for drizzling
  • 1 teaspoon vanilla extract (optional)
  • Chopped almonds for garnish (optional)

Instructions

  1. Rinse and hull about 1 cup (150g) of fresh strawberries. Slice them thinly about 1/4 inch thick.
  2. In a mixing bowl, combine 1 cup (240g) of Greek yogurt with 1 teaspoon of vanilla extract (if using). Stir gently to mix.
  3. Start with a spoonful of the vanilla yogurt at the bottom of your cups. Add a layer of sliced strawberries, then a layer of honey almond granola (about 2 tablespoons or 30g). Repeat the layers until your cups are full, ending with granola on top.
  4. Finish each cup with a light drizzle of honey—about 1 teaspoon (7g) per cup.
  5. Optionally, sprinkle chopped almonds or a few whole ones on top for extra texture.
  6. Serve immediately or refrigerate for up to 2 hours. Avoid storing longer to keep granola crunchy.

Notes

For best texture, keep granola separate until serving to maintain crunch. Use full-fat Greek yogurt for creaminess. You can prep strawberries and yogurt mixture ahead but add granola just before serving. Substitute coconut or almond milk yogurt and maple syrup for a vegan version.
