These no-bake energy balls are packed with fiber, protein, and chocolate-peanut butter flavor. Perfect for lunchboxes, after-school snacks, or a quick bite before soccer practice.

  • 1 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 2 tablespoons chia seeds
  • 2 tablespoons flaxseed meal
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine rolled oats, chia seeds, flaxseed meal, and cocoa powder. Stir until evenly distributed.
  2. Add peanut butter, honey, and vanilla extract. Stir until dry ingredients are fully coated and mixture holds together when pressed.
  3. If mixture is too dry, add another tablespoon of honey or peanut butter. If too sticky, add a tablespoon of oats.
  4. Fold in mini chocolate chips and a pinch of salt until evenly distributed.
  5. Chill the mixture in the refrigerator for 15 minutes for easier handling (optional).
  6. Using a cookie scoop or tablespoon, scoop portions (about 1.5 tablespoons each) and roll into smooth balls. Place on a baking sheet or plate.
  7. Let energy balls sit at room temperature for 10 minutes to firm up slightly. Serve or store.

Notes

For best texture, use old-fashioned rolled oats. If mixture is too dry, add more honey or peanut butter; if too sticky, add oats. Wet hands slightly before rolling to prevent sticking. Store in refrigerator for up to 2 weeks or freeze for up to 3 months.
