  • ½ cup (130g) creamy peanut butter
  • ⅓ cup (110g) honey
  • ¼ cup (45g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • Pinch of salt (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt (if using). Stir to distribute evenly.
  2. Add the creamy peanut butter and honey. Stir with a spatula until the oats are mostly coated.
  3. Use your hands to knead the mixture together for 1-2 minutes until it holds together when squeezed.
  4. Fold in the mini chocolate chips gently.
  5. Chill the mixture in the refrigerator for 15-20 minutes to make rolling easier.
  6. Line a baking sheet or plate with parchment paper. Scoop about 1 tablespoon of the mixture and roll into a smooth ball. Repeat until all mixture is used (about 14-16 balls).
