  1. Clean and dry the seeds: If using fresh pumpkin seeds, rinse them in a colander under cool water, removing any pumpkin flesh. Spread on a clean kitchen towel and pat dry thoroughly. Let air dry for about 10 minutes.
  2. Preheat your air fryer to 325°F (163°C) for about 3 minutes.
  3. In a medium mixing bowl, combine the dried pumpkin seeds with 1 tablespoon of oil. Toss well to coat.
  4. In a small bowl, mix together 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon salt. Sprinkle over the oiled seeds and toss until evenly coated.
  5. Spread the seasoned seeds in a single layer in the air fryer basket. Air fry at 325°F for 10 minutes, shaking the basket halfway through at the 5-minute mark. Seeds should be golden brown and smell toasty.
  6. Check for doneness: Seeds are done when golden brown and sound hollow when shaken. Let one cool for a minute before tasting. If still soft, air fry for another 1-2 minutes.
  7. Transfer seeds to a plate or baking sheet in a single layer. Let cool completely, about 10-15 minutes, before serving.

Notes

For best results, dry seeds thoroughly before cooking to ensure crunchiness. Watch closely during the last 2 minutes to prevent burning. Seeds get crunchier as they cool. Store in an airtight container at room temperature for up to 2 weeks. To revive crunch, reheat in air fryer at 300°F for 2-3 minutes.
