Ingredients

Scale
  • 4 ounces brie (double-cream, like Président)
  • 3 ounces sharp white cheddar (aged at least 6 months)
  • 2 ounces blue cheese (gorgonzola dolce)
  • 4 ounces prosciutto (thinly sliced, not shaved)
  • 3 ounces soppressata (dry Italian salami)
  • 6 fresh figs (ripe but firm)
  • 1 crisp apple (Honeycrisp or Fuji)
  • 1 small bunch red grapes (on the stem)
  • 1/3 cup raw pecans (or walnuts)
  • 1 tablespoon honey (plus extra for drizzling)
  • 1/2 teaspoon cinnamon
  • Pinch of sea salt
  • 1 small baguette (sliced into thin rounds, lightly toasted)
  • 1 cup assorted crackers (water crackers and rosemary flatbread crackers)
  • 2 tablespoons fig jam or membrillo (quince paste)
  • Small handful dried apricots
  • A few sprigs fresh rosemary or thyme (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a small baking sheet with parchment paper.
  2. Toss pecans with 1 teaspoon honey, cinnamon, and a pinch of sea salt. Spread in a single layer on one side of the baking sheet. Roast for 5-7 minutes until fragrant and toasty. Set aside to cool.
  3. Slice figs in half lengthwise. Place cut-side up on the other side of the baking sheet. Drizzle with a little honey and a tiny pinch of salt. Roast for 8-10 minutes until soft and honey is bubbling. Set aside.
  4. Slice baguette into thin rounds (about 1/4 inch thick). Arrange on the baking sheet, drizzle with olive oil, and toast for 5-6 minutes until golden at the edges.
  5. Take cheeses out of the fridge at least 15 minutes before serving. Slice brie into wedges, cut cheddar into thin slices or shave with a cheese plane, and crumble blue cheese into small pieces.
  6. Arrange cheeses on a wooden board (about 12×16 inches) in different spots: brie on one side, cheddar in the middle, blue cheese on the opposite end.
  7. Fold prosciutto into loose ribbons or waves and place near the brie. Slice soppressata into thin rounds and fan out near the cheddar.
  8. Fill in gaps with roasted figs, sliced apple, and grapes (leave grapes on the stem and drape over the edge).
  9. Place toasted baguette slices and crackers in small clusters around the board.
  10. Spoon fig jam or membrillo into a small bowl and place near the blue cheese. Put roasted pecans in another small bowl or pile directly on the board. Drizzle remaining honey over brie and roasted figs. Tuck fresh herb sprigs in for color.

Notes

Let cheese come to room temperature for at least 20 minutes before serving for best flavor. Watch pecans carefully as they burn quickly. Slice apples right before serving to prevent browning. The board is flexible—swap ingredients based on availability.
