Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few lumps are fine).
  3. Add the melted butter or oil, sugar, egg, and vanilla extract. Whisk or stir until well combined and smooth.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently with a wooden spoon or spatula until just combined (do not overmix).
  5. Fold in the chopped walnuts with a few gentle strokes.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  7. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
