  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1/2 cup milk (whole milk preferred)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed (for streusel)
  • 1/4 cup unsalted butter, cold and cubed (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)
  • Pinch of salt (for streusel)

Instructions

  1. Peel sweet potatoes and cut into 1-inch cubes. Place in a large pot, cover with cold water by about an inch, and add a generous pinch of salt. Bring to a boil, then reduce to a simmer. Cook for 12-15 minutes until fork-tender. Drain well and let steam dry for 1-2 minutes.
  2. Return drained sweet potatoes to the pot or a large mixing bowl. Mash with a potato masher until mostly smooth with a few small lumps. Add melted butter, brown sugar, eggs, milk, vanilla, cinnamon, nutmeg, and salt. Stir until well combined and smooth.
  3. In a medium bowl, combine flour, brown sugar, cinnamon, and salt for the streusel. Add cold cubed butter and chopped pecans. Use a pastry cutter, forks, or fingertips to cut butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces.
  4. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  5. Spread sweet potato filling evenly in the prepared dish. Sprinkle pecan streusel evenly over the top.
  6. Bake for 30-35 minutes until filling is set and streusel is golden brown and bubbling around the edges. Let rest for 5-10 minutes before serving.

Notes

For extra flavor, toast pecans at 350°F for 5-7 minutes before adding to streusel. To make ahead, prepare filling and streusel separately up to 2 days in advance; assemble and bake, adding 5-10 minutes to baking time. Watch streusel closely in last 10 minutes; tent with foil if browning too quickly.
