Transform a simple packet of instant ramen into a satisfying, flavorful bowl in under 5 minutes. This easy microwave recipe features a soft-cooked egg, frozen veggies, and a savory broth for a quick and delicious meal.

  • 1 package instant ramen noodles (any brand, discard or use half the seasoning packet)
  • 1 large egg (room temperature preferred)
  • 1/2 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil (optional)
  • 1 teaspoon sriracha or chili garlic sauce (adjust to taste)
  • 1/4 cup chopped green onions (optional)
  • 1 teaspoon butter or margarine
  • Pinch of black pepper
  • Pinch of garlic powder

Instructions

  1. Place the block of ramen noodles in a microwave-safe bowl. Break it up slightly. Add enough water to cover the noodles completely (about 1 1/2 cups). Microwave on high for 2 minutes until tender but slightly firm.
  2. Carefully remove the bowl. Stir in the frozen mixed vegetables. Let sit for 30 seconds to thaw.
  3. Drain about half of the water from the bowl, leaving noodles moist. Add soy sauce, sesame oil, sriracha, half the seasoning packet (if using), garlic powder, and black pepper. Stir until noodles are evenly coated.
  4. Crack the egg directly into the center of the noodles. Do not stir. Cover the bowl with a plate or damp paper towel. Microwave on high for 45 seconds to 1 minute until egg white is set but yolk is runny. Adjust time as needed.
  5. Carefully remove the bowl. Add butter on top and let it melt. Sprinkle with chopped green onions and a pinch of black pepper. Gently stir, breaking the yolk to coat the noodles. Serve immediately.

Notes

For best results, do not overcook the egg—start with 45 seconds and adjust. Use less water for a saucy broth rather than a soupy one. Layer flavors by adding seasonings after draining water. Prep toppings before starting to avoid overcooking the egg. This dish is best eaten immediately; leftovers do not store well.
