  • 2 tablespoons unsalted butter (30g)
  • ¼ cup brown sugar (50g), packed
  • 1 tablespoon white miso paste (15g)
  • 1 teaspoon vanilla extract (5ml)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice (15ml)
  • 1 tablespoon all-purpose flour (8g)
  • ¾ cup all-purpose flour (90g)
  • ½ cup rolled oats (45g)
  • ⅓ cup brown sugar (65g), packed
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 5 tablespoons cold unsalted butter (70g), cut into small cubes
  • ¼ cup chopped pecans or walnuts (30g), optional

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center.
  2. Make the crumble topping first. In a medium bowl, whisk together the flour, oats, brown sugar, salt, and cinnamon. Add the cold butter cubes and use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces still visible. Stir in the chopped nuts if using. Pop the bowl in the fridge while you make the filling.
  3. Prepare the apples. Peel, core, and slice the apples into ¼-inch wedges. Toss them with the lemon juice right away to prevent browning.
  4. Start the miso caramel. Place your oven-safe skillet over medium heat and add the 2 tablespoons of butter. Let it melt and foam slightly—about 1 minute. Add the brown sugar and stir constantly for 30 seconds until it starts to bubble.
  5. Add the miso paste. Drop in the miso and stir vigorously until it dissolves into the butter-sugar mixture. Keep stirring for about 20 seconds until it becomes smooth and smells deeply nutty.
  6. Cook the apples. Add the sliced apples, cinnamon, and salt to the skillet. Stir to coat every piece. Cook for 5 to 7 minutes, stirring occasionally, until the apples start to soften but still hold their shape.
  7. Thicken the filling. Sprinkle the tablespoon of flour over the apples and stir it in. Cook for another minute. Remove from heat and stir in the vanilla extract.
  8. Add the topping. Take the crumble topping out of the fridge. Sprinkle it evenly over the apples—don’t press it down.
  9. Bake. Place the skillet in the preheated oven and bake for 18 to 22 minutes. The topping should be golden brown and the filling should be bubbling up around the edges.
  10. Rest before serving. Let the crumble cool on a wire rack for at least 10 minutes.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. For a vegan version, use vegan butter or coconut oil. The crumble can be assembled ahead and refrigerated for up to 24 hours before baking. Leftovers keep in the refrigerator for up to 4 days.
