  • 1 scoop vanilla or unflavored protein powder (about 30 grams)
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: 1 tablespoon peanut butter drizzle, 1 tablespoon chocolate chips or cacao nibs, sliced banana or fresh berries, 1 tablespoon chia seeds or flax seeds, crushed peanuts or granola

Instructions

  1. Mix the protein powder with the milk first. In a small bowl or liquid measuring cup, add 1/2 cup milk and 1 scoop protein powder. Whisk vigorously until fully dissolved with no lumps.
  2. Combine the oats and liquid base. In a mason jar or container, add 1/2 cup rolled oats. Pour the milk and protein powder mixture over the oats. Add 1/2 teaspoon vanilla extract and a pinch of salt. Stir gently to combine.
  3. Add the peanut butter and sweetener. Add 2 tablespoons creamy peanut butter and 1 tablespoon maple syrup or honey to the jar. Don’t stir it in completely—leave some swirls and pockets.
  4. Stir everything together. Use a spoon to fold the ingredients together until the oats are mostly coated.
  5. Cover and refrigerate. Put the lid on the jar and place it in the refrigerator. Let it sit for at least 4 hours, but overnight is best (8-12 hours).
  6. Serve cold or warm. In the morning, take the jar out of the fridge. Give it a good stir. If too thick, add a splash of milk and stir. If too thin, let it sit for another hour.
  7. Add your toppings. Add sliced banana, a drizzle of extra peanut butter, chocolate chips, berries, or crushed nuts.

Always mix protein powder into liquid first to avoid clumps. Don’t over-stir peanut butter—leave swirls for flavor bursts. Use room temperature milk for faster absorption. Adjust sweetness based on protein powder. Don’t skip the salt. Use rolled oats, not instant or steel-cut.
