  • 4 oz Prosciutto, thinly sliced
  • 4 oz Salami (Genoa or soppressata), pre-sliced rounds
  • 2 oz Chorizo, dried Spanish (optional)
  • 4 oz Brie, softened at room temperature
  • 4 oz Aged Cheddar, sharp and crumbly
  • 2 oz Goat Cheese, log or disc
  • 1/2 cup Crackers (mix of plain water crackers and seedy crackers like rosemary or flaxseed)
  • 1/4 cup Cornichons
  • 1/4 cup Mixed Olives, pitted (green and kalamata)
  • 2 tbsp Honey
  • 1/4 cup Dried Apricots (or dried figs)
  • 1/4 cup Almonds, toasted
  • Fresh Grapes (optional, a handful)
  • Fresh Rosemary Sprigs (optional, for garnish)
  • Baguette Slices (optional, toasted lightly)

Instructions

  1. Prep Your Cheeses (2 minutes): Take the brie out of the fridge and let it sit at room temperature for about 20 minutes before serving. Slice the aged cheddar into thin triangles or small cubes. Leave the goat cheese in a log or slice it into rounds.
  2. Fold the Meats (3 minutes): Lay a slice of prosciutto flat on your board. Fold it in half lengthwise, then gently roll it into a small rosette. Repeat with the remaining slices. For the salami, fold each slice in half and then in half again to create small triangles. If using chorizo, slice it into thin rounds.
  3. Arrange the Board (5 minutes): Place cheese wedges at different points on the board—brie on one side, cheddar in the middle, goat cheese on the other. Arrange the meats in small clusters around the cheeses.
  4. Add the Accompaniments (3 minutes): Spoon the cornichons and olives into small bowls and place them on the board. Scatter the dried apricots and almonds in the empty spaces. Drizzle a little honey over the brie and goat cheese.
  5. Fill in the Gaps (2 minutes): Add the crackers and baguette slices around the board, tucking them into any empty spots. If using grapes, scatter them on top. Garnish with fresh rosemary sprigs.
  6. Serve Immediately: Enjoy the board right away with a glass of wine or your favorite beverage.

Notes

Let cheeses sit at room temperature for 20 minutes before serving for best flavor. Don’t overcrowd the board; leave space between items. For a dairy-free version, use plant-based cheeses and agave or maple syrup instead of honey. For a gluten-free option, use gluten-free crackers or cucumber rounds.
