  • 6 ears fresh corn on the cob
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 3 tablespoons fresh lime juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup cotija cheese or feta, crumbled (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F to 450°F). Husk the corn and remove all silk.
  2. Grill the corn directly on the grates for 10 to 12 minutes, turning every 2 to 3 minutes, until charred in spots. Let cool slightly.
  3. Cut the kernels off the cobs using a sharp chef’s knife. You should have about 4 to 5 cups.
  4. In a small bowl or mason jar, whisk together lime juice, olive oil, smoked paprika, cumin, salt, and black pepper.
  5. Pour the dressing over the warm corn and stir gently. Let sit for 5 minutes.
  6. Add the black beans, red bell pepper, red onion, jalapeño (if using), and cilantro. Stir until combined.
  7. Taste and adjust seasoning with more salt, lime juice, or smoked paprika as needed.
  8. Top with crumbled cotija or feta cheese just before serving, if desired.
  9. Let the salad rest at room temperature for at least 10 minutes before serving to allow flavors to meld.

Notes

For best flavor, dress the corn while it’s still warm. Let the salad rest before serving. Leftovers keep in the refrigerator for up to 4 days. Not recommended for freezing.
