A quick and easy flatbread recipe featuring sweet figs, salty prosciutto, tangy goat cheese, and a balsamic glaze drizzle. Perfect for entertaining or a simple weeknight meal, ready in just 25 minutes.

  • 4 pieces of naan bread or flatbread
  • 2 tablespoons olive oil
  • 1 clove garlic, minced (optional)
  • 1 cup fresh figs, stemmed and quartered
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces goat cheese, crumbled
  • 1/2 cup fresh arugula
  • 1/4 cup balsamic glaze
  • 1/4 cup crumbled gorgonzola or blue cheese (optional)
  • Flaky sea salt, for finishing
  • Fresh thyme leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while preheating.
  2. Rinse figs gently, pat dry, cut off tough stem end, and quarter each fig lengthwise. Set aside.
  3. Place flatbreads on a parchment-lined baking sheet. Brush tops evenly with olive oil. If using garlic, rub cut side of clove onto oiled surface.
  4. Pre-bake flatbreads for 5 minutes until edges just start turning golden. Remove and let cool for 2 minutes on the baking sheet.
  5. Layer toppings: Sprinkle goat cheese evenly across flatbreads. Arrange fig quarters cut-side up, pressing gently into cheese. Tear prosciutto into rough pieces and drape over figs. If using gorgonzola, sprinkle on now.
  6. Bake for 10-12 minutes until cheese softens, figs caramelize at edges, and prosciutto crisps slightly. Flatbread edges should be deep golden brown.
  7. Remove from oven and let rest for 2 minutes. Top with fresh arugula, a generous drizzle of balsamic glaze, and a sprinkle of flaky sea salt. Add fresh thyme if using.
  8. Slice each flatbread into 4-6 pieces using a sharp knife or pizza cutter. Serve warm.

Notes

Pre-baking the flatbreads is crucial to prevent sogginess. Watch the prosciutto closely as it can burn quickly. Let the flatbread rest for a few minutes before slicing for cleaner cuts. For a vegetarian version, skip the prosciutto and add caramelized onions.
