  • 2 teaspoons baking powder

  • 1 ¾ cups (420ml) buttermilk
  • 1 large egg, lightly beaten
  • 3 tablespoons (42g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup blueberries (optional, fresh or frozen)
  • ½ cup chocolate chips (optional)
  • 1 ripe banana, sliced thin (optional)

Instructions

  1. Mix the dry ingredients. In a large bowl, whisk together 2 cups flour, 3 tablespoons sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, and ½ teaspoon salt. Whisk until evenly combined.
  2. Combine the wet ingredients. In a separate bowl, whisk together 1 ¾ cups buttermilk, 1 beaten egg, 3 tablespoons melted butter, and 1 teaspoon vanilla until smooth and slightly frothy.
  3. Make a well and pour. Create a well in the center of the dry ingredients. Pour the wet mixture into the well. Stir gently with a spatula or wooden spoon using a folding motion until just combined. A few lumps are okay.
  4. Let the batter rest. Let the batter sit for 10 minutes. You’ll see tiny bubbles forming on the surface.
  5. Heat your skillet. Place your skillet or griddle over medium heat. Test it by flicking a drop of water onto the surface—if it sizzles and evaporates, it’s ready. Lightly butter the surface.
  6. Pour the batter. Use a ¼-cup measure to pour batter onto the hot skillet. Leave about 2 inches between each pancake.
  7. Cook until bubbles form. Let the pancakes cook undisturbed for 2-3 minutes. When bubbles pop and leave little holes, it’s time to flip.
  8. Flip and finish. Slide your spatula under the pancake and flip it quickly. Cook for another 1-2 minutes on the second side, until golden brown.
