The Best Quick Maple Roasted Brussels Sprouts with Bacon

A quick and easy side dish of caramelized Brussels sprouts and crispy bacon coated in a sweet maple glaze, ready in under 30 minutes. Perfect for weeknights or holiday gatherings.

  • 1 pound Brussels sprouts, trimmed and halved
  • 4 slices thick-cut bacon, chopped into 1-inch pieces
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper, freshly ground
  • Optional: 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or spray with cooking spray.
  2. Rinse Brussels sprouts under cold water and pat dry. Trim off the woody ends and peel off any yellow or damaged leaves. Cut each sprout in half from top to bottom; quarter any large ones.
  3. Stack bacon slices and cut crosswise into 1-inch pieces.
  4. In a mixing bowl, combine halved Brussels sprouts, chopped bacon, maple syrup, olive oil, salt, and pepper. Toss with your hands or a spatula until evenly coated.
  5. Spread the mixture onto the prepared baking sheet in a single layer, placing sprouts cut-side down as much as possible.
  6. Roast for 20-25 minutes. After 12 minutes, remove the pan and flip the sprouts and stir the bacon using tongs. Return to the oven and roast for another 8-13 minutes, until sprouts are tender and caramelized and bacon is crispy.
  7. If desired, drizzle with balsamic vinegar immediately after removing from the oven. Toss gently.
  8. Let rest for 2 minutes before serving.

Notes

Dry sprouts thoroughly to avoid steaming. Do not overcrowd the pan; use two pans if doubling. For extra caramelization, broil for 1-2 minutes at the end, watching carefully. If sprouts brown too fast but aren’t tender, cover loosely with foil for the last 5 minutes.
