Ingredients

  • Pork shoulder (4-5 pounds)
  • Yellow mustard (2 tablespoons)
  • BBQ rub (3 tablespoons)
  • Apple juice (1 cup)
  • BBQ sauce (1 cup)
  • Chicken broth (½ cup)
  • Restaurant-style tortilla chips (1 large bag)
  • Shredded Mexican blend cheese (2 cups)
  • Shredded cheddar cheese (1 cup)
  • Black beans (1 can, drained and rinsed)
  • Corn kernels (1 cup)
  • Jalapeños (fresh or pickled, sliced)
  • Pico de gallo (1 cup)
  • Sour cream (½ cup)
  • Guacamole (1 cup)
  • Fresh cilantro (¼ cup, chopped)
  • Lime wedges
  • Pickled red onions (optional)

Instructions

  1. Coat the pork shoulder with yellow mustard, then apply the BBQ rub generously. Let it sit for 30 minutes at room temperature.
  2. Preheat smoker to 225°F (107°C) using hickory or apple wood. Place the pork on the smoker and cook for 6-8 hours, spritzing with apple juice every hour. Internal temperature should reach 203°F (95°C). Wrap in foil and rest for at least 30 minutes.
  3. Shred the pork using two forks or bear claws. Discard large fat pieces. Toss shredded meat with BBQ sauce and chicken broth.
  4. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil.
  5. Spread a single layer of tortilla chips on the baking sheet. Sprinkle half the shredded cheese, half the black beans, half the corn, and half the pulled pork. Repeat with another layer of chips, remaining cheese, beans, corn, and pork.
  6. Bake for 10-12 minutes until cheese is melted and bubbly. Optionally, broil for 1-2 minutes for extra crispy edges.
  7. Arrange toppings in small bowls: pico de gallo, sour cream, guacamole, jalapeños, cilantro, and lime wedges.
  8. Serve nachos immediately on a large platter or baking sheet. Let guests add their own toppings.

Notes

For a quicker version, use store-bought smoked pulled pork. To keep chips from getting soggy, layer in two rounds and don’t overload with wet toppings. Serve immediately after baking.
