A make-ahead breakfast casserole with fluffy eggs, perfectly browned sausage, and a golden crust. Assemble it the night before and bake in the morning for a stress-free, crowd-pleasing breakfast.

  • 1 pound breakfast sausage (loose, not patties)
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper (freshly ground preferred)
  • 1 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 6 cups cubed day-old bread (French or sourdough preferred)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup diced onion (optional)
  • 1/2 cup diced bell pepper (optional)
  • 1 cup sliced mushrooms (optional)
  • 2 cups fresh spinach (optional)

Instructions

  1. Brown the sausage in a large skillet over medium-high heat, breaking it into small crumbles, about 6-8 minutes. If using onions or peppers, add them halfway through. Drain excess grease and let cool for 5-10 minutes.
  2. In a large bowl, whisk eggs until combined. Add milk, salt, pepper, dry mustard, and garlic powder; whisk until smooth.
  3. Grease a 9×13-inch baking dish. Spread cubed bread evenly in the dish. Sprinkle cooked sausage over the bread.
  4. Pour egg mixture evenly over the bread and sausage. Gently press down with a spatula to help bread absorb the liquid. Sprinkle both cheeses on top.
  5. Cover tightly with foil and refrigerate for at least 4 hours, preferably overnight.
  6. When ready to bake, preheat oven to 350°F. Remove casserole from fridge while oven heats.
  7. Bake covered for 30 minutes. Remove foil and bake another 15-20 minutes until top is golden brown and a knife inserted in center comes out clean.
  8. Let rest for 5-10 minutes before cutting into squares. Serve warm.

Notes

Don’t skip the overnight rest for best texture. Use day-old bread to avoid sogginess. Let sausage cool before adding to egg mixture. For a crispy top, broil for 2 minutes after baking. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
