  • 1/2 cup (170g) honey
  • 1/4 cup (60ml) low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) toasted sesame oil
  • 2 tablespoons (16g) cornstarch
  • Salt and black pepper to taste
  • Optional: sliced green onions, toasted sesame seeds, red pepper flakes for garnish

Instructions

  1. Preheat the oven to 250°F (120°C). Place one rack in the middle of the oven and another about 6 inches from the broiler for later.
  2. If using whole wings, cut them at the joint to separate the drumettes from the flats. Discard the wing tips or save for stock. Pat the wings very dry with paper towels.
  3. In a large bowl, sprinkle the cornstarch, salt, and pepper over the wings and toss until evenly coated. Shake off any excess.
  4. Place a wire rack inside a rimmed baking sheet. Arrange the wings in a single layer on the rack, leaving space between each piece.
  5. Bake at 250°F for 30 minutes. This renders fat and starts crisping.
  6. Remove the sheet from the oven and increase the oven temperature to 425°F (220°C). Once hot, return the sheet and bake for another 20-25 minutes, flipping halfway, until golden brown and crispy.
  7. While wings bake, make the glaze: In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, and toasted sesame oil. Bring to a gentle simmer over medium heat, then reduce to low. Simmer for 8-10 minutes, stirring occasionally, until thickened slightly. Remove from heat.
  8. Once wings are baked, transfer them to a large bowl. Pour about two-thirds of the warm glaze over the wings and toss gently to coat. Reserve remaining glaze.
  9. Return glazed wings to the wire rack in a single layer. Broil for 2-3 minutes, watching closely, until glaze bubbles and caramelizes.
  10. Remove from oven and brush or drizzle remaining glaze over hot wings. Garnish with green onions and sesame seeds. Let rest 2-3 minutes before serving.

Do not skip the low-temperature step; it ensures tender, juicy meat. Watch the broiler closely to prevent burning. For extra crispiness, dry wings thoroughly and let them sit on a paper-towel-lined plate in the fridge for 10 minutes before coating. Make extra glaze for dipping.
