  • 1 ¾ cups (350g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder

  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot brewed espresso or strong coffee
  • 1 ½ cups (3 sticks / 340g) unsalted butter, softened
  • 3 ½ cups (420g) powdered sugar, sifted
  • ¾ cup (75g) unsweetened cocoa powder, sifted
  • 2 tablespoons espresso powder dissolved in 2 tablespoons hot water
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 34 tablespoons heavy cream or milk
  • Chocolate shavings or curls (optional)
  • Flaky sea salt (optional)
  • Fresh coffee beans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans and line bottoms with parchment paper. Lightly flour the sides.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt for 30 seconds.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and stir with a spatula until just combined (a few streaks of flour are okay).
  5. Slowly pour hot espresso into the batter while stirring gently. Batter will become thin and liquid.
  6. Divide batter evenly among the three pans (about 14-15 ounces per pan). Bake for 22-26 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let cakes cool in pans for 10 minutes, then invert onto a cooling rack, remove parchment, and cool completely (at least 1 hour).
  8. For the frosting: In a stand mixer with paddle attachment, beat softened butter on medium speed for 3-4 minutes until pale and creamy.
  9. Dissolve espresso powder in hot water. Sift together powdered sugar and cocoa powder.
  10. With mixer on low, gradually add sugar-cocoa mixture to butter. Add dissolved espresso, vanilla, and salt. Beat on medium for 2 minutes.
  11. Add heavy cream one tablespoon at a time until frosting is smooth and spreadable.
  12. Place one cake layer on a cake stand. Spread about ¾ cup frosting evenly on top. Repeat with second layer. Add third layer.
  13. Apply a thin crumb coat all over the cake. Refrigerate for 20 minutes.
  14. Apply remaining frosting to top and sides. Use an offset spatula for smooth strokes. Garnish with chocolate shavings and flaky sea salt if desired.

Notes

Don’t skip the hot coffee step; it creates a silky texture. Measure flour correctly by spooning and leveling. Use room temperature ingredients. Let layers cool completely before frosting. Level domed layers with a serrated knife for even stacking. The cake tastes even better the next day.
