Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium mixing bowl, combine 1 cup creamy peanut butter, 1 cup granulated sugar, 1 large egg, and 1 teaspoon vanilla extract. Beat with an electric mixer on medium speed until smooth and well combined, about 2 minutes.
  3. Cover the bowl with plastic wrap and refrigerate for 20 minutes.
  4. Scoop out rounded tablespoons of dough (about 1.5 inches in diameter) and roll them into balls. Roll each ball in granulated sugar until coated. Place them on the prepared baking sheets about 2 inches apart. You should get about 24 cookies.
  5. Dip a fork in sugar and press down gently on each cookie ball, making a crisscross pattern. Don’t press too hard — you want them about 1/4 inch thick.

  9. Before the chocolate sets, gently press two candy eyes onto the top of each cookie.
